Sodium citrate is colorless or white crystal and crystalline powder. It is inodorous and taste salt, cool. It will loss crystal water at 150° C and decompose at more high temperature. It dissolves in ethanol.
Sodium citrate is the name of any sodium salt of citric acid:
(1) monosodium citrate;
(2) disodium citrate;
(3) trisodium citrate, the most common being the third and having the same E331 number
Sodium citrate is used to enhance flavor and maintain stability of active ingredients in food and beverage in detergent industry, it can replace Sodium tripolyphosphate as a kind of safe detergent it can aloe be used in fermentation, injection, photography and metal plating.

used in the food industry, especially as an acidification agent, PH buffer, and other compounds as a preservative. In detergent industry, it is an ideal substitute for phosphate. Chemical cleaning of boiler, acid washing agent, chemical cleaning and rinsing agent for boiler. It is mainly used as food acidity agent, and is also used to prepare medicine cooling agent and detergent.
