    Function of Sodium alginate
    Sodium alginate is a kind of high viscosity polymer compound. It is different from starch, cellulose, etc., in that it has
    carboxyl group, which is the aldehyde group of β-D-mannouronic acid, a high glycolonic acid formed by glycoside bond. Its functional properties are as follows:
    (1) strong hydrophilic, can be dissolved in cold and warm water, forming a very viscous homogeneous solution.
    (2) The real solution formed has softness, uniformity and other excellent properties that are difficult to obtain by other
    analogs.
    (3) It has a strong protective effect on colloid and strong emulsifying ability on oil.
    (4) Adding aluminum, barium, calcium, copper, iron, lead, zinc, nickel and other metal salts to the solution will generate
    insoluble alginate. These metal salts are buffers of phosphates and acetate of sodium and potassium, which can inhibit and delay solidification.

     
    Application of Sodium alginate
    (1) Noodle food: 0.2% to 0.5% sodium alginate is added into the production of noodles, fish noodles, fast food noodles and cheese noodles, which can significantly increase the stickiness, prevent from becoming brittle, effectively reduce the breakage rate,cooking resistance, foam resistance, non-stick, strong strength, high toughness, fine taste, lubrication, chewy.
    (2) ice cream, Popsicle, ice cream: production of ice cream, Popsicle, ice cream, generally add 0.1-0.5% sodium alginate as a stabilizer, the mixture is uniform, easy to adjust the flow of the mixture when freezing, easy to stir. The products are good shape preserving, smooth and delicate, and taste good
    (3) Milk products and beverages: Sodium alginate can be used as a stabilizer for frozen milk, frozen juice and other beverages. Adding appropriate amount of sodium alginate to frozen milk can obviously increase the taste, no sticky and stiff feeling. In particular, the addition of 0.25%-2% alginate sodium in yogurt can maintain and improve the shape of the curd, prevent viscosity decline in the process of high temperature disinfection, but also can prolong the storage period, so that its special flavor unchanged. It can also be used as a thickener and emulsifier for margarine. In addition, added to the beverage, with saccharin and accessories to make a refreshing fruit syrup, with a smooth and uniform taste, stable and not layered.
